Morning Sickness Muffins

After several failed attempts at creating a no white stuff muffin, I FINALLY came up with one that's so good my husband has ate the majority of them (so maybe too good?).

Wholey Goodness Muffins


  • 1 mashed banana
  • 1 egg
  • 1/2 cup water
  • 1/2 cup maple syrup
  • 1/2 cup applesauce
  • 1 tsp vanilla
  • 1.5 cups whole wheat flour
  • 0.5 cups rolled oats
  • 1 tbl flax meal
  • 1 teaspoon baking soda
  • 2 1/4 teaspoons baking powder
  • nutmeg to taste
  • 1.5 cup fresh or frozen blueberries/blackberries

This is so easy...350 for the oven...mix wet ingredients...mix dry ingredients (except blueberries)...add wet to dry...mix till just combined...add blueberries...and you're done!! Divide into 12 lined muffin cups and bake for 15-16 minutes.
